Have you ever heard of trofie al pesto? Perhaps trofie al pesto "avantagge"?


It's one of the most typical and delicious dishes of Genoese cuisine: fresh pasta, Genoese pesto DOP, boiled potatoes, and green beans!


Thinking about it makes me feel like a child again: Grandpa Mario, making pesto strictly in a mortar, throws a handful of salt into boiling water, and in a few minutes my mouth starts watering... I'd never be able to resist a finger in the mortar to taste the freshly made pesto!


You should know that, right on the street where Nanin's home is located, is located the "Novella" company, a very famous pasta factory in Sori! The aroma of pesto will fill your way home!


I thought I'd share the recipe for trofie al pesto with you, guests and future guests! Mind you, it's not Grandpa Mario's; his pesto is a secret kept by my mother!
